Stir Raw Parsnip Rice

1 cup parsnip rice (processed in food processor until rice like)
2 tablespoons chopped red onion
¼ cup chopped green pepper
1 clove of garlic
¼ cup chopped cilantro
3 Tablespoons olive oil
1 teaspoon chili powder
¼ teaspoon ground cumin
1 tablespoon wheat free tamari
½ teaspoon sea salt

Add all ingredients to parsnip rice and mix well.







Marinated Spinach with Sundried Tomatoes

1 bag triple washed organic spinach (about 8oz.)
1 cup sliced sundried tomatoes
½ cup extra virgin olive oil
¼ cup lemon juice
1 teaspoon sea salt
1 teaspoon Italian seasoning

Add all ingredients to the spinach and mix well.







"Fried Fish"

Thank goodness we did not have to harm the poor little fish with this recipe and we do not have to harm ourselves with all that
grease. This recipe takes a little work but it is worth it.

Ingredients:

Zucchini (About 3)
Raw nori sheets

Marinade:
1/2 cup extra virgin olive oil
1 Tbsp lemon juice
1 tsp paprika
1/2 tsp cayenne pepper
1 tsp dried parsley
1 tsp dried basil
1 tsp granulated kelp
1 tsp dulse flakes
1 tsp sea salt

Batter:
2 cups raw sunflower seeds
1/2 cup golden flaxseeds
1 tsp dried parsley
1 tsp dried basil
1 tsp sea salt

Cut zucchini (leave the skin on) lengthwise into fillets about 1/3 inch thickness you should get about 4-5 slices from a
medium sized zucchini. Mix the ingredients for the marinade in a long dish. Cover each piece of the zucchini on both
sides with the marinade, marinate for at least 20 minutes. Cut the nori sheet into long strips, you can use the perforated
marks on the sheet as a guide. While the zucchini is marinating place the nori strips on one side of the zucchini.

Mix ingredients of the dry batter (ground sunflower seeds and ground flax seeds and spices) together by hand in a bowl.
Put in a long dish and dip the marinated, nori wrapped zucchini in the dry batter, covering it completely on both sides.
Place on the dehydrator tray and dehydrate at 110 degrees for about 3 hours and then flip it over and dehydrate for
another hour and you have "fried fish"! enjoy!
